Butter or margarine
One of the topics that came up repeatedly in press reviews of the first edition was the use of a named brand of margarine throughout the book. Some members suggested that this was a missed opportunity and more recipes featuring butter should have been included, others leapt to the defence of margarine, whilst a small, unorthodox wing championed vegetable oil.
We believe the new recipes should feature butter. We understand the significance of this change, especially for an association which is regarded as a guardian of standards. It is for this reason that we invite the membership to help us shape this decision. We want to make these changes in a way that does not alienate people who are strong advocates of using margarine.
